These are a few of my favorite things…

For those who know me well, they know that I LOVE Mexican food!  Whenever I fly to the US, I try to make Mexican my first meal.  I could probably eat it every day…

Last week, I began planning a Mexican feast for myself.  I had some corn tortillas and a can of chili left over from the summer so I decided to make Enchiladas, Mexican rice and beans (they are like pinto beans but called cranberry here).

The Enchiladas recipe comes from the time that I lived in Monte Alto, Texas (in South Texas).  Several of the women there taught me how to make them.  The Mexican (some of you may call them Spanish) rice recipe came from a friend, Judy Jones, who lived in Mexico.  She gave me the recipe in 2004 while visiting her and her husband, who live in Frankfurt, Germany,  during Thanksgiving.  Her recipe is my favorite!!!  Of course, I learned how to make beans from my mom.  I even went to the expense of purchasing some tortilla chips from one of our local stores  at $7.

I finally sat down at 7:30 p.m. and ate my meal.  I savored every bite…
